Blood Orange Maple Glazed Carrots

These carrots turned out delicious. The blood orange and maple pair perfectly with the carrots. These come together very easily and would be perfect for any day of the week. You could also make these for a holiday dinner or when you have company coming over.

Blood Orange Maple Glazed Carrots

The carrots are roasted in a sweet, blood-orange glaze and make a perfect side dish for any meal.

Ingredients
  • 6 carrots, peeled
  • 1/4 C blood orange juice (a regular orange will work too if you can’t find blood oranges)
  • 2 T maple syrup
  • 1 garlic clove, minced
  • 1/4 tsp sea salt
  • 1 T ghee

Instructions
  1. Preheat the oven to 400 degrees. In a small saucepan, combine the orange juice, maple syrup, garlic, sea salt, and ghee. Place the pan on medium heat and bring to a boil. Boil for 1 minute.
  2. Place the carrots on a parchment-lined sheet pan and toss in 1 tablespoon of the glaze. Roast in the oven for 20 minutes.
  3. Remove the sheet pan from the oven and toss the carrots in the remaining glaze. Place the carrots back in the oven and roast for an additional 25-30 minutes, depending on the thickness of your carrots.
  4. The carrots should be soft and slightly caramelized when they are fully cooked. Serve the carrots with the thickened glazed from the sheet pan.
