Air Fryer Beef Tips & Vegetables
This air fryer recipe is Whole30 and Paleo compatible. The beef is marinated overnight and then cooked with a variety of vegetables.

Ingredients
- 1 lb. beef tips or steak of choice- cut into 1-inch cubes
- 1/2 C coconut aminos
- 1/2 tsp fish sauce
- 1 T rice vinegar
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp ginger powder
- 1 small zucchini, cut in half and sliced 1/4 inch thick (about 2 cups)
- 1 small yellow squash, cut in half and sliced 1/4 inch thick (about 2 cups)
- 2 C asparagus, cut into 1-inch pieces
- 1 small sweet potato, 1/4 inch dice (about 2 cups)
- 3 garlic cloves, minced
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 T ghee
Instructions
- In a medium bowl combine the coconut aminos, fish sauce, rice vinegar, oregano, onion powder, garlic powder, and ginger powder. Add in the steak and stir to combine everything. Cover the bowl and place it in the refrigerator for 24 hours.
- After the steak is marinated, place the diced sweet potato into the air fryer. Cook at 400 degrees for 5 minutes. If you cut your potatoes larger than 1/4 inch dice, you will need to cook them longer than 5 minutes.
- In a medium bowl combine the zucchini, squash, asparagus, garlic, salt, pepper, and ghee. Stir everything together to coat the vegetables with the ghee, salt, and pepper. When the timer goes off on the air fryer, toss the vegetable mixture in with the potatoes. Mix everything thoroughly and set the timer for 12 minutes. Check your potatoes before tossing the vegetables in, they should be starting to soften. If they haven’t started to soften, cook an additional 3 minutes.
- When the vegetable timer goes off, toss the vegetable mixture and place the marinated steak pieces on top. Set the timer for an additional 8 minutes.
- The beef and vegetables should be fully cooked when the last timer goes off. Toss everything together and serve.
