Air Fryer Chocolate Chip Cookie Cups
This recipe makes two cookie cups that are gluten-free and paleo.

Ingredients
- 3 T butter or palm shortening, softened
- 1/4 C coconut or maple sugar
- 1/4 tsp sea salt
- 1 egg, at room tempurature
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 C Paleo Flour Mix, I used Bob's Red Mill
- 1/4 C chocolate chips
Instructions
- In a medium bowl or the bowl of a stand mixer, cream together the butter and coconut or maple sugar.
- Mix in the salt, egg, and vanilla extract.
- Next, mix in the paleo flour and baking powder.
- Fold in the chocolate chips.
- Grease two ramekins
- Divide the cookie dough evenly between the two ramekins.
- Place the ramekins in the air fryer and cook at 325 degrees for 14-16 minutes.
