Almond Butter, Jam, & Banana Cauli N'oatmeal
These n'oatmeal bowls are cauliflower-based, dairy-free, and Paleo but taste like oatmeal. They are creamy and the perfect way to start the day.

Ingredients
- 1-10oz frozen cauliflower rice
- 2 C full fat coconut milk
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 2 scoops collagen peptides
- 2 T maple syrup
- 2 bananas, sliced
- 1/4 C sliced almonds, toasted
- almond butter or nut butter of choice
- raspberry jam or jam of choice
Instructions
- In a medium pot on medium heat, combine the cauliflower rice, coconut milk, vanilla, cinnamon, collagen, and maple syrup. Bring to a simmer and cook for 15-17 minutes, stirring occasionally to keep it from burning.
- The n’oatmeal should be thick and have the consistency of regular oatmeal when it’s finished cooking. Divide the n’oatmeal into two bowls.
- Top the n’oatmeal with sliced bananas, sliced almonds, almond butter, and jam.
- Enjoy for breakfast.
