Almond Joy Collagen Bites

Collagen bites make great snacks because they contain protein and healthy fats. These are also Paleo and gluten-free.

Ingredients

  • 1 C unsweetened coconut flakes
  • 1/2 C almond butter- no salt, almonds are the only ingredient
  • 2 scoops unflavored collagen peptides
  • 1 T vanilla extract
  • 1/4 C honey
  • 1/2 C sliced almonds
  • 1/4 tsp sea salt
  • 1/4 C chocolate chips (I used Enjoy Life mini chips)

Instructions

  1. In a medium mixing bowl, add all the ingredients for the collagen bites. Use a rubber spatula to mix everything until it’s thoroughly combined.
  2. Use a spring-loaded cookie scoop to form balls of the mixture. Roll them in your hands to make them smooth.
  3. Enjoy right away and store any extra in the refrigerator.
