Almond Joy Collagen Bites
Collagen bites make great snacks because they contain protein and healthy fats. These are also Paleo and gluten-free.

Ingredients
- 1 C unsweetened coconut flakes
- 1/2 C almond butter- no salt, almonds are the only ingredient
- 2 scoops unflavored collagen peptides
- 1 T vanilla extract
- 1/4 C honey
- 1/2 C sliced almonds
- 1/4 tsp sea salt
- 1/4 C chocolate chips (I used Enjoy Life mini chips)
Instructions
- In a medium mixing bowl, add all the ingredients for the collagen bites. Use a rubber spatula to mix everything until it’s thoroughly combined.
- Use a spring-loaded cookie scoop to form balls of the mixture. Roll them in your hands to make them smooth.
- Enjoy right away and store any extra in the refrigerator.
