Apple Spice Turkey Meatballs with a Tahini Sauce

Meatballs are so versatile because you can incorporate so many different ingredients to change the flavor completely. These turkey meatballs are seasoned with spices and apples for a touch of sweetness. They are Whole30 and Paleo compatible.

Ingredients

  • 2 lbs. ground turkey
  • 1 granny smith apple- peeled, cored, and diced
  • 3 handfuls spinach
  • 3 garlic cloves, minced
  • 1 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp cloves
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 2 T ghee
  • 1 C unsweetened applesauce
  • 1/2 C tahini
  • 3 T coconut aminos
  • 1 T rice vinegar

Instructions

  1. In a medium bowl add the ground turkey and the garlic. Preheat the oven to 400 degrees.
  2. In a large sauté pan on medium-low heat add the ghee. Once the ghee has melted add the diced apples, 1 teaspoon of sea salt, cinnamon, 1/2 teaspoon of ground ginger, cloves, allspice, and nutmeg. Cook the spiced apple mixture for about 5 minutes or until the apples start to soften. Add the spinach and continue cooking until the leaves are wilted.
  3. Combine the apple/spinach mixture with the ground turkey. Mix it thoroughly so everything is combined. Using a spring-loaded ice cream scoop, form balls of the turkey mixture and place them on a parchment-lined sheet pan.
  4. Place in the oven and bake for 17-20 minutes.
  5. In a high-speed blender or a mason jar wide enough to fit an immersion blender, add the applesauce, tahini, coconut aminos, rice vinegar, 1/2 teaspoon of ground ginger, and 1/2 teaspoon of sea salt.
  6. Blend everything until smooth and serve with the turkey meatballs.
