Ingredients
- 2 lbs. ground turkey
- 1 granny smith apple- peeled, cored, and diced
- 3 handfuls spinach
- 3 garlic cloves, minced
- 1 1/2 tsp sea salt
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/4 tsp cloves
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 2 T ghee
- 1 C unsweetened applesauce
- 1/2 C tahini
- 3 T coconut aminos
- 1 T rice vinegar
Instructions
- In a medium bowl add the ground turkey and the garlic. Preheat the oven to 400 degrees.
- In a large sauté pan on medium-low heat add the ghee. Once the ghee has melted add the diced apples, 1 teaspoon of sea salt, cinnamon, 1/2 teaspoon of ground ginger, cloves, allspice, and nutmeg. Cook the spiced apple mixture for about 5 minutes or until the apples start to soften. Add the spinach and continue cooking until the leaves are wilted.
- Combine the apple/spinach mixture with the ground turkey. Mix it thoroughly so everything is combined. Using a spring-loaded ice cream scoop, form balls of the turkey mixture and place them on a parchment-lined sheet pan.
- Place in the oven and bake for 17-20 minutes.
- In a high-speed blender or a mason jar wide enough to fit an immersion blender, add the applesauce, tahini, coconut aminos, rice vinegar, 1/2 teaspoon of ground ginger, and 1/2 teaspoon of sea salt.
- Blend everything until smooth and serve with the turkey meatballs.
