Beef & Squash Noodles
This dish is comfort food and perfect for cooler days. It uses hearts of palm noodles, making it Whole30 and Paleo compatible.

Ingredients
- 1 lb. ground beef
- 1 small yellow onion, small dice
- 4 garlic cloves, minced
- 2 C-1/2-inch cubed butternut squash
- 1-12oz package Palmini hearts of palm pasta
- 2 tsp sea salt
- 1/2 tsp cracked black pepper
- 3 C spinach
- 3 C full fat coconut milk
- 1/4 C nutritional yeast
- 1 1/2 tsp rubbed sage
- 1 tsp lemon juice
Instructions
- In a large skillet on medium heat add the ground beef, onion, garlic, sage, sea salt, and pepper. Chop the beef up into small pieces and cook it until it’s no longer pink, about 5-7 minutes.
- Add the hearts of palm noodles, butternut squash, coconut milk, nutritional yeast, and lemon. Reduce heat to low, cover, and simmer for 8-10 minutes.
- Stir in spinach and continue cooking until the spinach is wilted, about 3-5 minutes.
- Serve in bowls and enjoy!
