Blood Orange Maple Glazed Carrots
The carrots are roasted in a sweet, blood-orange glaze and make a perfect side dish for any meal.

Ingredients
- 6 carrots, peeled
- 1/4 C blood orange juice (a regular orange will work too if you can’t find blood oranges)
- 2 T maple syrup
- 1 garlic clove, minced
- 1/4 tsp sea salt
- 1 T ghee
Instructions
- Preheat the oven to 400 degrees. In a small saucepan, combine the orange juice, maple syrup, garlic, sea salt, and ghee. Place the pan on medium heat and bring to a boil. Boil for 1 minute.
- Place the carrots on a parchment-lined sheet pan and toss in 1 tablespoon of the glaze. Roast in the oven for 20 minutes.
- Remove the sheet pan from the oven and toss the carrots in the remaining glaze. Place the carrots back in the oven and roast for an additional 25-30 minutes, depending on the thickness of your carrots.
- The carrots should be soft and slightly caramelized when they are fully cooked. Serve the carrots with the thickened glazed from the sheet pan.
