Blueberry Lemon Chia Seed Pudding
These little jars of chia seed pudding make the perfect summer treat. They are sweet, slightly tart, and so delicious. Being Paleo and dairy-free is the bonus.

Ingredients
- 3 C full fat coconut milk
- 1/4 C honey
- 1 tsp vanilla extract
- zest of 1 lemon
- 2 lemons, juiced
- 1 C chia seeds
- 1/4 tsp sea salt
- blueberries
Instructions
- In a medium bowl whisk together the coconut milk, honey, lemon zest, lemon juice, chia seeds, vanilla, and sea salt.
- Once everything is fully combined, ladle the mixture into jars and cover with either lids or plastic wrap. Place in the refrigerator overnight.
- Before serving, top the chia pudding with blueberries and enjoy.
