Brownie Batter Chia Pudding

Chia seed pudding is a great snack option. It provides fiber and healthy fats and is delicious! This version tastes like brownie batter and provides a great vessel for chocolate.

Ingredients

  • 3 C full fat coconut milk
  • 1/4 C unsweetened cocoa powder
  • 1 T vanilla extract
  • 1/4 C honey
  • 1/4 tsp sea salt
  • 3/4 C chia seeds
  • chocolate chips
  • cacao nibs

Instructions

  1. In a medium bowl whisk together the coconut milk, cocoa powder, chia seeds, vanilla extract, honey, and sea salt.
  2. Once everything is fully combined, ladle the mixture into jars and cover with either lids or plastic wrap. Place in the refrigerator overnight.
  3. Before serving, top the chia pudding with chocolate chips and cacao nibs. Enjoy!
