Buttery Cinnamon Maple Whipped Sweet Potatoes
These potatoes are as good, if not better, than the traditional sweet potatoes topped with marshmallows. The bonus is these are Paleo and gluten-free!

Ingredients
- 3 medium sweet potatoes
- 3 T ghee
- 3/4 tsp sea salt
- 1/2 tsp cinnamon
- 2 T maple syrup
Instructions
- Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
- Lay the sweet potatoes on the sheet pan and drizzle with avocado oil. Rub the potatoes in the oil to completely cover them.
- Place in the oven and bake for 50-60 minutes. The potatoes should be easily pierced with a fork when they are done. Let them cool for a few minutes and then remove the skins. The skins should slide right off.
- Place the skinless potatoes in a medium bowl and add the ghee, sea salt, cinnamon, and maple syrup. Whip them with an electric hand mixer or in the bowl of a stand mixer. They should be smooth when they are fully whipped.
