Easy Acai Bowls

This is an easy version of a delicious treat that is perfect for any time of the day. It's also gluten-free and paleo-friendly.

Ingredients

  • 1/2 C frozen strawberries
  • 1/2 C frozen blueberries
  • 7oz frozen acai chunks
  • 1 sliced frozen banana
  • 3/4 C full fat coconut milk
  • 3 T honey

Topping Options

  • sliced strawberries
  • blueberries
  • sliced banana
  • mango
  • pineapple
  • sliced almonds
  • granola
  • chia seeds
  • nut butter of choice
  • honey

Instructions

  1. Add the frozen strawberries, frozen blueberries, frozen acai chunks, frozen banana slices, coconut milk, and honey to a high-speed blender.
  2. Blend until the mixture is smooth and no chunks remain about 2-3 minutes.
  3. Divide the mixture evenly between two bowls.
  4. Place in the freezer for about an hour.*
  5. Remove from the freezer and add desired toppings.

*I prefer my acai bowls with a more frozen consistency. The step is optional depending on the consistency you prefer.
