Filet Mignon with an Herb Compound Butter

Ingredients
- 1 stick salted butter, at room temperature
- 2 garlic cloves, minced
- 2 T fresh thyme
- 1 T minced parsley
- 1/2 lemon zested
- 4-5oz filet mignon
- sea salt
- pepper
Instructions
- In a small bowl, add the butter, garlic, thyme, parsley, and lemon zest. Mix thoroughly to combine well.
- Add the butter mixture to a piece of parchment paper and form a log. Twist each end shut and place in the refrigerator for at least 8 hours.
- Pat your filet mignon dry and generously season with salt and pepper on both sides. Let the steak rest for about 30 minutes, allowing it to come to room temperature.
- Place your filets face down on the grill or grill pan and sear for 5 minutes. Turn the filet a quarter turn and continue searing for 3 minutes.
- Flip the filet and repeat the process. This will give you a medium-rare steak. Cook longer for more well done.
- Remove the steaks from the grill and allow them to rest for 5 minutes before serving.
- Top each steak with a generous slice of the herb compound butter and enjoy.
