This recipe uses hearts of palm noodles, olive oil, and bacon to make an easy delicious dish. It's also Whole30 and Paleo compatible.
- Cook the bacon until crispy*, roughly chop it, and set it aside.
- Fill a medium pot with water and bring to a boil. Add the drained and rinsed hearts of palm noodles and boil for about 5-7 minutes. Drain and set the noodles aside.
- In a large skillet on medium-low heat, add olive oil and garlic. Sauté the garlic until it is soft and slightly brown but not burnt, about 2-3 minutes.
- Add the capers, tomatoes, lemon juice, sea salt, and pepper. Sauté 2-3 minutes.
- Toss in the pasta and crumbled bacon. Continue cooking for 4-5 minutes. Remove the pan from the heat.
- Add the basil and stir to combine everything thoroughly.
- Serve in bowls.
*Bacon can be cooked in the air fryer, oven, or in a pan on the stovetop.
