Garlic Herb Carrots

Ingredients
- 6 medium to large carrots, peeled and sliced into coins
- 2 T olive oil
- 1 tsp sea salt
- 3 garlic cloves, minced
- 1 1/2 tsp fresh thyme
- 1 1/2 tsp roughly chopped chives
Instructions
- In a medium sauté pan on medium heat, add the olive oil and carrots and mix thoroughly. Cover the pan and cook for 5 minutes.
- Uncover the pan and add the garlic, sea salt, thyme, chives, and oregano. Continue cooking for 3-5 minutes, occasionally stirring until the carrots are tender.
