Garlic & Onion Beef with Cauli Rice
This is a great dish for busy weeknight meals. It comes together quickly, and it is delicious. Did I mention it's Paleo and Whole30 compatible!?!

Ingredients
- 2-10oz bags frozen cauliflower rice
- 1/2 C chicken broth
- 1/2 C full fat coconut milk
- 3 T minced ginger root
- 12 garlic cloves, minced
- 1/2 C yellow onion, small dice
- 2 lbs. ground beef
- 1/4 C + 2 T coconut aminos
- 1/2 C cilantro, roughly chopped
- 1 tsp sea salt
- 1 T ghee
- 2 tsp rice vinegar
Instructions
- In a medium saucepan on medium heat, add the cauliflower rice, chicken broth, coconut milk, 4 minced garlic cloves, 1 tablespoon minced ginger root, and 1/2 teaspoon sea salt. Simmer for 30 minutes or until most the liquid has evaporated.
- In a large sauté pan on low heat add the ghee, onion, 2 tablespoons minced ginger, and 8 minced garlic cloves. Sauté until the mixture is fragrant, about 5 minutes.
- Add the beef and break it up into small pieces. Turn the heat to medium and add 1/2 teaspoon sea salt and cook until the beef is no longer pink. Drain any excess fat from the pan.
- Add the coconut aminos, cilantro, and rice vinegar. Stir to combine and continue cooking an additional 3-4 minutes.
- To serve add the cauliflower rice to a bowl or plate and top with the beef. Enjoy.
