Garlic Parsnip Puree
Using parsnips for a puree base is a fun way to switch up a mashed potato side. Parsnips are creamy, flavorful, and so delicious. This side dish is Whole30 and Paleo compatible.

Ingredients
- 1 lb. parsnips, peeled and cut into 2-inch pieces
- 1 C coconut milk
- 2 garlic cloves, minced
- 1 1/4 tsp sea salt
- 1 T ghee
Instructions
- In a medium saucepan on medium heat, add the parsnips, coconut milk, garlic, salt, and ghee. Bring the mixture to a boil, place a lid on the pan, and reduce the heat to low.
- Simmer until the parsnips are tender, about 10-15 minutes.
- Puree the parsnip and coconut milk mixture with an immersion blender or in a high-speed blender.
- Serve as a side dish to any meal.
