Gluten Free Cinnamon Roll Mug Cake

Ingredients
- 2 T almond flour
- 1 T cassava flour
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/8 tsp sea salt
- 1/2 tsp ground cinnamon
- 2 T maple sugar
- 1 tsp Sip Herbals Cinnamon Faux Joe
- 1/4 C hot water
Instructions
- Add the Cinnamon Roll Faux Joe to a tea strainer and add ¼ cup of hot water. Let it steep for 3 minutes and then remove the strainer. Set the liquid aside to cool.
- In a small bowl or liquid measuring cup, whisk together the almond flour, cassava flour, salt, baking powder, ¼ teaspoon cinnamon, and 1 tablespoon of maple sugar.
- Add the egg, vanilla extract, and 1 tabelspoon of Faux Joe liquid to the dry ingredients. Whisk everything together until there are no lumps remaining.
- Pour the batter into a 10-12oz microwavable mug.
- In a small bowl, mix 1 tablespoon of maple sugar and ¼ teaspoon cinnamon. Sprinkle the cinnamon and sugar mixture on top of the batter in the mug and use a knife to swirl it around the batter.
- Place the mug with the batter in the center of the microwave and cook on high for 1 ½ minutes.
- Remove from the microwave and enjoy!
