Hidden Veggie Chicken Bites
These little chicken bites are delicious and won't last long in your house. I included instructions for cooking them in the air fryer and oven. Added bonus- they are Whole30, paleo, and AIP compatible.

Ingredients
- 1 lb ground chicken
- 1 small zucchini, shredded (about 2 cups)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp sea salt
- 1/4 tsp black pepper (omit for AIP)
- 1/2 tsp Italian seasoning
Instructions
- Use cheesecloth or a clean towel to squeeze the liquid out of the shredded zucchini. Try to squeeze as much liquid out as possible.
- In a medium bowl, add the ground chicken, zucchini, garlic powder, onion powder, sea salt, pepper, and Italian seasoning. Mix everything until it’s thoroughly combined.
- Use a spring-loaded cookie scoop to form balls of the chicken mixture. Flatten the balls to form an oval, nugget shape.
- For the air fryer: place the chicken bites in a single layer and cook at 400 degrees for 6-7 minutes. The chicken should be fully cooked and have a golden-brown color.
- For the oven: preheat to 400 degrees. Place the chicken bites on a parchment-lined sheet pan and bake for 12-15 minutes. The chicken will be cooked through, but it won’t have the golden-brown color they get in the air fryer.
- Serve with your favorite dipping sauce.
