Honey Glazed Bacon Wrapped Shrimp

Ingredients
- 1 lb. shrimp
- 10oz bacon
- 1 1/2 T honey + more for drizzling
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
- Place the bacon in a single layer on the parchment-lined sheet pan and bake for 10 minutes. Remove the bacon from the oven. It should start to render the fat, but not be crispy.
- Pat the shrimp dry with a paper towel and sprinkle with pepper.
- Cut the bacon in thirds and wrap each piece around one shrimp. You can use a toothpick to hold the bacon in place or wrap the bacon tightly.
- Add a cooling rack to the bacon sheet pan and place the bacon-wrapped shrimp on the cooling rack. Baste the shrimp with honey.
- Place the sheet pan with the shrimp in the oven and bake for 10-12 minutes. The shrimp should be cooked, and the bacon should be crispy.
- Drizzle the shrimp with more honey before serving.
