Instant Pot Braised Beef & Noodles
This Instant Pot meal requires few ingredients but is full of flavor and delicious. It's also Whole30 and Paleo compatible.

Ingredients
- 2 T avocado oil
- 1/4 C tapioca flour
- 3 lb. boneless chuck roast
- 2 tsp sea salt
- 1 tsp pepper
- 4 C beef broth
- 8 garlic cloves, minced
- 3/4 C dry red wine (omit on Whole30)
- 2 tsp dry thyme
- 2 T coconut aminos
- 2-12oz packages hearts of palm noodles, drained and rinsed
Instructions
- Sprinkle the salt and pepper over the entire roast.
- Add the avocado oil to the Instant Pot and set it to sauté. Once the Instant Pot is hot, sear all sides of the roast.
- Deglaze the pot with the red wine. (Skip this step if you are completing a Whole30. Use some of the beef broth to deglaze.) Sprinkle the tapioca flour over the roast and bottom of the pot. Add the beef broth, coconut aminos, garlic, and thyme.
- Lock the Instant Pot lid in place and set it to pressure cook on high for 1 hour.
- Manually release the pressure and shred the beef roast. Add the hearts of palm noodles and mix everything together.
- Serve in bowls and enjoy!
