Lemon Air Fryer Zucchini & Squash
This air fryer side dish is Whole30 and Paleo compatible and comes together quickly. It's flavorful and pairs great with any main dish.

Ingredients
- 1 small zucchini, cut in half, and then 1/4 inch thick slices
- 1 small yellow squash, cut in half, and then 1/4 inch thick slices
- 1/4 small yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1 T lemon juice
- 2 tsp ghee, melted
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp Italian seasoning
Instructions
- In a medium bowl, toss all the ingredients together. Mix well so all the ingredients are evenly seasoned.
- Place the squash and zucchini mixture in the basket of the air fryer and set the temperature to 400 degrees.
- Cook the vegetable mixture for 15-20 minutes, stirring everything about halfway through.
- Serve as a side dish to any meal.
