Paleo Bacon Cheeseburger Casserole
This casserole is topped with the creamiest, dairy-free cheese sauce and makes a great meal prep recipe. It's Whole30 and Paleo compatible.

Ingredients
- 2 large sweet potatoes
- 12oz bacon
- 16oz frozen shredded hash browns
- 2 T avocado oil
- 2 lbs. ground beef
- 4 tsp sea salt
- 1/4 tsp black pepper
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 2 1/2 C full fat coconut milk (from the can, not carton)
- 1 C nutritional yeast
- 1/4 C lemon juice
Instructions
- Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
- Place the sweet potatoes on the sheet pan and drizzle them with 1 tablespoon of avocado oil. Rub the avocado oil on the potatoes to cover them entirely. Place them in the oven and bake for 45-50 minutes.
- Line another sheet pan with parchment paper and lay the bacon in a single layer on the pan. Place in the oven and cook for 15-17 minutes. The bacon should be crispy when it has finished cooking.
- Add the frozen hash browns to a 9x9 baking dish and place it in the oven for 17 minutes. When the hash browns are done, set them aside.
- In a large sauté pan on medium heat, add 1 tablespoon of avocado oil and the ground beef. Break the beef into small pieces and continue cooking until it’s no longer pink.
- Drain any excess fat from the pan. Add 1 ½ teaspoon of sea salt, pepper, garlic powder, and onion powder. Stir to combine everything.
- Spread the cooked ground beef evenly over the warmed hash browns and press everything down in the pan. Set it aside.
- Remove the skins from the sweet potatoes and place the potatoes in a medium bowl.
- Add the coconut milk, lemon juice, nutritional yeast, and 2 ½ teaspoons of sea salt. Blend using an immersion blender until the cheese sauce is smooth and creamy.
- Pour the cheese sauce over the ground beef and place in the oven to bake for 25 minutes.
- Roughly chop the bacon and when the casserole has finished baking, sprinkle it over the top.
