Pineapple & Shrimp Cauliflower Rice

Ingredients
- 2-12oz bags frozen cauliflower rice
- 1 small yellow onion, small dice
- 4 green onions, thinly sliced
- 2 C fresh pineapple, large dice
- 1/2 C shredded carrots
- 1/2 C coconut aminos
- 1/2 tsp fish sauce
- 1 tsp sesame oil
- 5 garlic cloves, minced
- 1 T minced ginger root
- 1 lb. shrimp, peeled and deveined
- 2 T avocado oil
Instructions
- In a large skillet on medium heat, add the avocado oil and onion. Sauté until the onion is translucent, stirring occasionally.
- Add the garlic and ginger and continue cooking until the mixture is fragrant, about 1-2 minutes.
- Add the shrimp and carrots and cook for 5-7 minutes.
- Add the coconut aminos, fish sauce, sesame oil, and cauliflower rice. Stir everything together and continue cooking for 6-7 minutes, stirring occasionally. Most of the liquid should have evaporated.
- Add in the green onions and pineapple. Continue cooking the shrimp and cauliflower rice mixture for a few more minutes, just until the pineapple is warm.
- Serve in bowls and enjoy!
