Ingredients

  • 2 lbs. boneless pork chops
  • 1 pink lady apple, thinly sliced
  • 5 pieces bacon, chopped
  • 1 large yellow onion, thinly sliced
  • 1 T fresh sage, minced
  • 1 T ghee
  • 1 T coconut aminos
  • 3/4 tsp sea salt
  • 2-3 T avocado oil
  • 1/8 tsp ground black pepper

Instructions

  1. In a large sauté pan on medium heat, add the chopped bacon and cook until the fat is rendered and the bacon is crispy. Remove the bacon from the pan and set it aside.
  2. Turn the heat to medium-low and add the onions and 1/4 teaspoon of sea salt. Continue cooking until the onions are caramelized, about 7-10 minutes.
  3. While the onions are caramelizing, pat your pork chops dry and sprinkle 1/2 teaspoon of sea salt and the black pepper evenly over them all. In a separate large sauté pan on medium heat, add the avocado oil.
  4. Once it is hot, add the pork chops and continue cooking until they are done, making sure to flip them halfway through cooking. The cook time will vary depending on the thickness of your pork chops and how well you like them cooked.
  5. Once the onions have caramelized, remove them from the pan. Add the ghee and the apples. Cook the apples until they are tender, about 5-7 minutes. Add the bacon and onions back in. Next, add the sage and coconut aminos and stir so that everything is combined.
  6. Serve the pork chops with the apple and onion mixture on top.
