Pumpkin Butter

Ingredients

  • 1 3/4 C pumpkin puree
  • 1/2 C coconut sugar
  • 1/2 C apple juice
  • 2 tsp vanilla extract
  • 2 cinnamon sticks
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp sea salt

Instructions

  1. In a medium saucepan, add the pumpkin puree, coconut sugar, apple juice, vanilla extract, cinnamon sticks, pumpkin pie spice, and sea salt.
  2. Turn the heat to medium and bring the mixture to a simmer, stirring occasionally.
  3. Once the mixture is simmering, turn the heat to low and simmer 5-7 minutes, often stirring to prevent it from burning.
  4. Remove the cinnamon sticks and store it in an airtight container for up to three weeks.
