Roasted Cauliflower & Sweet Potato
This side dish is flavorful and delicious. It will pair perfectly with any main dish and is Whole30 and Paleo compatible.

Ingredients
- 1 head of cauliflower, cut into small florets
- 2 small sweet potatoes, small dice
- 1 1/2 tsp cumin
- 1/2 tsp turmeric
- 1 small yellow onion, large dice
- 5 garlic cloves, minced
- 1 1/2 T ginger root, minced
- 1/2 lime, juiced
- 1 1/2 tsp sea salt
- 3 T ghee, melted
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- In a large bowl toss the cauliflower and sweet potatoes with cumin, turmeric, onion, garlic, ginger, lime juice, sea salt, and ghee.
- Spread the cauliflower and sweet potatoes in a single layer on the sheet pan. Place in the oven and bake for 45-50 minutes. The cauliflower should be slightly charred, and the sweet potatoes should be soft when it’s done.
- Enjoy right away or store leftovers in the refrigerator and use them for any meal.
