Roasted Citrus Carrots
These carrots are tossed in a cinnamon citrus glaze after being roasted. They are Whole30 and Paleo compatible.

Ingredients
- 24oz carrots, quartered and cut into 2-inch-long pieces
- 1 1/2 C orange juice
- 1/2 tsp cumin
- 1/2 tsp cinnamon
- 1 tsp orange zest
- 1 T avocado oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions
- Preheat the oven to 450 degrees and line a sheet pan with parchment paper. Toss the carrots with avocado oil, sea salt, and pepper. Spread the carrots in a single layer on the sheet pan and place them in the oven to roast for 15-20 minutes.
- In a small saucepan add the orange juice, cumin, cinnamon, and orange zest. Place it on medium heat and bring to a boil. Reduce the mixture for about 20 minutes or until 1/4 cup remains.
- Toss the roasted carrots in the reduced orange glaze and serve. Enjoy!
