Sesame Asparagus & Mushrooms
This asparagus dish combines shiitake mushrooms, fresh ginger and garlic, sesame oil, and coconut aminos. It's Whole30 and Paleo compatible.

Ingredients
- 1 lb. asparagus, cut into 2-inch pieces
- 5oz shiitake mushrooms, stems removed and sliced
- 4 garlic cloves, minced
- 1 T minced ginger root
- 1 1/2 tsp sesame oil
- 3 T coconut aminos
- 1/2 tsp sea salt
- 1 T ghee
Instructions
- In a large sauté pan on medium-low heat, add the ghee. Once the ghee has melted add the garlic and ginger. Sauté for 1-2 minutes, stirring occasionally to prevent it from burning.
- Turn the heat to medium and add the mushrooms, asparagus, and 1/2 C water. Continue cooking until the water has evaporated.
- Add the coconut aminos, sesame oil, and sea salt. Cook an additional 2-3 minutes, stirring occasionally. The asparagus and mushrooms should be fully cooked.
- Serve as a side dish to any meal.
