Shaved Brussels Sprout Salad
This is a fun and delicious way to get vegetables in. The Brussels sprouts are tossed with apple, hazelnuts, and an easy vinaigrette. It's Paleo and gluten-free.

Ingredients
- 1/2 C olive oil
- 2 tsp honey
- 2 T lemon juice
- 1/2 tsp sea salt
- 4 C shaved brussels sprouts
- 1 pink lady apple, cored and small dice
- 1/3 C hazelnuts, toasted
- 1/4 C minced red onion
Instructions
- In a small bowl, whisk the olive oil, honey, lemon juice, and sea salt thoroughly.
- In a medium bowl, toss the shaved brussels sprouts, apple, hazelnuts, and onion. Drizzle the olive oil dressing over the salad and mix well.
- Enjoy! Store any extra in the refrigerator for up to 3 days.
