Spicy Pork & Asparagus

Ingredients
- 1 lb. ground pork
- 1 1/2 T avocado oil
- 5 garlic cloves, minced
- 1 T minced ginger root
- 1 bunch asparagus, ends trimmed off, and stalks cut into 2-inch pieces
- 1/4 C + 1 T coconut aminos
- 1 tsp crushed red pepper
- 1 tsp sesame oil
- 1 tsp fish sauce
- 2 tsp rice vinegar
Instructions
- In a large skillet on medium-low heat, add avocado oil, garlic, and ginger. Sauté for about 1 minute, occasionally stirring to keep the mixture from burning.
- Add the ground pork and chop it into small pieces. Continue cooking until the pork is fully cooked and no pink remains. If you have a large amount of excess fat in the pan, drain the fat.
- Add the asparagus pieces, coconut aminos, crushed red pepper, sesame oil, fish sauce, and rice vinegar. Stir together and cook until the asparagus is soft about 5-7 minutes.
- Serve and enjoy!
