Truffle Green Beans with Hazelnuts
Truffles and green beans do I need to say much more!? This is a fun Whole30 and Paleo compatible dish to liven up your vegetable side dishes.

Ingredients
- 4 C green beans
- 2 shallots, thinly sliced
- 1 T ghee
- 3 garlic cloves, minced
- 1/2 lemon, zested
- 1/2 tsp lemon juice
- 1/4 C hazelnuts, toasted and roughly chopped
- 1/2 tsp sea salt
- black truffle oil
Instructions
- Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans to the pot. Boil for about 5 minutes. Immediately remove the green beans and place them in an ice bath. Set aside.
- In a large sauté pan on medium heat, add the ghee and shallots. Continue cooking, stirring occasionally, until the shallots caramelize. This should take about 5-7 minutes.
- Add garlic and sauté for another minute, being careful to not burn the garlic. Add the green beans, sea salt, lemon zest, and lemon juice. Sauté for an additional 3-5 minutes.
- Remove the pan from the heat and finish with drizzling truffle oil over the green beans and sprinkling the toasted hazelnuts on top. Serve immediately.
