Parsnip Fries

Sometimes I have to trick my husband into eating vegetables. He thinks he doesn't like any of them, so I hide them in different dishes or swap out potatoes and replace them with parsnips.

Enter parsnip French fries. When these are dipped in your favorite sauce, you can't even tell they are parsnips. I love the flavor of parsnips so I eat these without any dipping sauce, and if you know me, I am a sauce person so that says a lot. Give these a try if you have a picky eater you need to get more veggies into.

Parsnip Fries

These parsnip fries can be passed off as traditional french fries made out of potatoes, and it's a great way to get more veggies in. They are also Whole30 and Paleo compatible.

Ingredients
  • 2 lbs. parsnips, peeled
  • 1 T avocado oil
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 tsp sea salt
  • 1/4 tsp black pepper
Instructions
  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  2. Cut the parsnips into ¼ inch French fry-like shapes and place them in a bowl.
  3. Toss the fries with avocado oil, garlic powder, onion powder, sea salt, and pepper.
  4. Spread the fries in a single layer on the sheet pan and place them in the oven. Bake for 25-30 minutes. The fries should be golden brown and cooked through with a crispy outer layer.
  5. Serve with your favorite dipping sauce.
