Easy Acai Bowls

I love a good acai bowl on a warm day, but it’s difficult to find a store-bought version that isn’t filled with sugar. This version isn’t overly sweet and can be dressed up with any topping combinations that you love.

Easy Acai Bowls

This is an easy version of a delicious treat that is perfect for any time of the day. It's also gluten-free and paleo-friendly.

Ingredients
  • 1/2 C frozen strawberries
  • 1/2 C frozen blueberries
  • 7oz frozen acai chunks
  • 1 sliced frozen banana
  • 3/4 C full fat coconut milk
  • 3 T honey

Topping Options

  • sliced strawberries
  • blueberries
  • sliced banana
  • mango
  • pineapple
  • sliced almonds
  • granola
  • chia seeds
  • nut butter of choice
  • honey
Instructions
  1. Add the frozen strawberries, frozen blueberries, frozen acai chunks, frozen banana slices, coconut milk, and honey to a high-speed blender.
  2. Blend until the mixture is smooth and no chunks remain about 2-3 minutes.
  3. Divide the mixture evenly between two bowls.
  4. Place in the freezer for about an hour.*
  5. Remove from the freezer and add desired toppings.

*I prefer my acai bowls with a more frozen consistency. The step is optional depending on the consistency you prefer.
