This is a great way to jazz up your morning breakfast. I love adding blueberries to things like salads, eggs, and now sausage. You can meal prep these on Sunday and have something quick and easy to add to your breakfast all week long.
Sometimes you need something to jazz up breakfast time, and these blueberry sausage patties will do just that. They are Whole30 and Paleo compatible.
• 1 lb. ground pork
• 1/2 tsp sea salt
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp dried oregano
• 1/4 tsp cinnamon
• 1/4 tsp turmeric
• 1/2 tsp ground sage
• 3/4 C fresh blueberries
• 1-2 T avocado oil
1. In a medium bowl combine the herbs and spices with the pork. Make sure everything is mixed thoroughly. Gently mix in the blueberries.
2. Use a spring loaded ice cream scoop to make balls of the pork mixture. Use your hands to flatten the balls out and make patties.
3. In a large skillet on medium heat, add the avocado oil. Once the oil is hot add the sausage patties. Cook 3-4 minutes until the patties are golden brown and flip them over. Continue cooking the other side 3-4 minutes until they are also golden brown. Remove from the pan and set them aside. Depending on the size of your skillet, you may have to cook in batches.
4. Serve the sausage patties right away or store them in an airtight container in the refrigerator for up to a week.
