Ingredients
  • 2 T almond flour
  • 1 T cassava flour
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 2 T maple sugar
  • 1 tsp Sip Herbals Cinnamon Faux Joe
  • 1/4 C hot water
Instructions
  1. Add the Cinnamon Roll Faux Joe to a tea strainer and add ¼ cup of hot water. Let it steep for 3 minutes and then remove the strainer. Set the liquid aside to cool.
  2. In a small bowl or liquid measuring cup, whisk together the almond flour, cassava flour, salt, baking powder, ¼ teaspoon cinnamon, and 1 tablespoon of maple sugar.
  3. Add the egg, vanilla extract, and 1 tabelspoon of Faux Joe liquid to the dry ingredients. Whisk everything together until there are no lumps remaining.
  4. Pour the batter into a 10-12oz microwavable mug.
  5. In a small bowl, mix 1 tablespoon of maple sugar and ¼ teaspoon cinnamon. Sprinkle the cinnamon and sugar mixture on top of the batter in the mug and use a knife to swirl it around the batter.
  6. Place the mug with the batter in the center of the microwave and cook on high for 1 ½ minutes.
  7. Remove from the microwave and enjoy!
