Goat Cheese & Caramelized Onion Crostini

These gluten-free goat cheese and caramelized onion crostini’s are the perfect blend of savory and sweet, with just the right hint of herbaceous flavor! These are easy and a crowd pleaser- perfect for the holiday season, dinner party, or afternoon snack. They are also gluten free, but no one will be able to tell.

Ingredients
  • 4 Against the Grain Garlic and Rosemary Rolls, cut into 1/4 inch thick slices
  • 1/4 C butter, melted
  • 2 sweet onions, thinly sliced
  • 2 T avocado oil
  • 1 tsp sea salt
  • 4oz goat cheese
  • 2T pine nuts, toasted
  • 1/4 C honey
  • 2 tsp champagne vinegar
  • 1/2 T fresh thyme
Instructions
  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
  2. Dredge the sliced roll pieces in the melted butter and lay them flat on the sheet pan. Place in the oven and bake for 9 minutes. The crostini should be golden brown but not burnt.
  3. In a medium skillet on medium heat, add about 2 tablespoons of avocado oil, the sliced onions, and 1 teaspoon of sea salt. Continue cooking until the onions are caramelized, stirring occasionally to keep them from burning.
  4. In a small saucepan on low heat, add the honey, champagne vinegar, and thyme. Once the mixture comes to a boil, remove it from the heat.
  5. Spread the goat cheese on the crostini and top with the caramelized onions and pine nuts.
  6. Drizzle with the honey mixture and enjoy!
