Blueberry Thyme Matcha Lemonade

This lemonade isn’t overly sweet and still has some tartness to it. If you aren’t a matcha fan, you can leave out the matcha shots and still have a delicious lemonade that will be a crowd-pleaser. After creating this recipe, I took the lemonade to our local food bank, where we volunteer. Everyone loved it and was excited for the recipe to be published so they could make it. It is perfect for backyard get-togethers or on a warm summer day.

Blueberry Thyme Matcha Lemonade

This lemonade recipe can be served with matcha or without, depending on your taste preference. It's sweetened with honey and is a perfect summer drink.

Ingredients
  • 1 1/2 C honey
  • 5 C filtered water
  • 15-20 fresh thyme sprigs
  • 7 lemons, juiced (about 1 1/4 C)
  • 2 C blueberries
  • ice
  • 4 tsp matcha powder
Instructions
  1. In a medium saucepan on low heat, add the honey and 1 cup of water. Whisk the mixture together and once it is warmed, add the sprigs of thyme and blueberries and steep for 30 minutes.
  2. Press the blueberries until they pop and the juices release. Use a fine-mesh sieve lined with cheesecloth and strain the blueberry simple syrup mixture.
  3. Mix the blueberry simple syrup with 5 cups of water and the lemon juice.
  4. Make the matcha shots by mixing ½ teaspoon matcha powder with ¼ cup water per glass of lemonade.
  5. Add ice to a glass and fill with the lemonade, leaving 1 inch of room at the top.
  6. Add one matcha shot to each glass of lemonade.
  7. Enjoy!
