Easy Roasted Vegetable Medley

Vegetables are a must for me. I like to make veggie recipes that are easy and delicious. This one is perfect to make during your meal prep time and eat it throughout the week. You may need more than one sheet pan, depending on the size you are using.

Easy Roasted Vegetable Medley

This is an easy side dish that combines a variety of veggies and roasts them to perfection. Perfect for meal prep, and it's Whole30 and Paleo compatible.

Ingredients
  • 1 asparagus bundle, cut into 2-inch pieces (about 4 cups)
  • 1 large carrot, cut into 1/4-inch-thick coins
  • 1 large parsnip, cut into 1/4-inch-thick coins
  • 1 medium zucchini, sliced in half, and then 1/2-inch-thick pieces
  • 1/2 small yellow onion, large dice
  • 3 garlic cloves, minced
  • 2 T ghee, melted
  • 1/2 lemon, juiced
  • 1 tsp Italian seasoning
  • 1 tsp sea salt

Instructions
  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper. Depending on the size of the sheet pan, you may need 2.
  2. In a medium bowl, toss all the ingredients together and spread them on the sheet pan in a single layer.
  3. Place in the oven and roast for 30-35 minutes. Vegetables should be soft when they are cook through.
  4. Enjoy!
