Italian Sausage Sheet Pan Meal

Easy meals are a favorite of mine. I love sheet pan meals for that reason. All you need to do for this recipe is chop a few different vegetables and toss them with seasonings. Spread them on a sheet pan, add the sausage links, and place them in the oven. In under an hour, dinner is ready. Depending on the size of the sheet pan you have, you may need two sheet pans for this meal. You want the vegetables in a single layer to cook evenly and crisp up.

This sheet pan meal has veggies, carbs, protein. The ingredients are simple, but the flavors are bold, and it's Whole30 and Paleo compatible.

Ingredients
  • 1 lb. Italian sausage links (if doing a Whole30 round, make sure the sausage is sugar-free)
  • 1 lb. Brussels sprouts, ends trimmed off and sliced in half
  • 2 parsnips, peeled and cut into 1/2 inch thick slices
  • 1 large sweet potato, cut into 1/2 inch thick wedges
  • 1 small red onion, cut into 8 wedges
  • 2 T avocado oil
  • 1 tsp onion powder
  • 1 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 T coconut aminos

Instructions
  1. Preheat the oven to 375 degrees.
  2. In a large bowl, add Brussels sprouts, parsnips, sweet potato, and red onion.
  3. Toss the vegetables with avocado oil, sea salt, pepper, onion powder, and garlic powder until everything is evenly coated.
  4. Spread the vegetable mixture on the sheet pan in a single layer. Drizzle the coconut aminos over the vegetables. Lay the sausage links on the vegetables.
  5. Place the sheet pan in the oven and roast for 50-60 minutes. The sausage should be cooked, and the vegetables should have a slight char to the outside.
