Onion Fig Jam

If I could live on charcuterie boards, I would. They are my love language. Part of what I love about a good charcuterie board is the sauces and jams that come with them. Meats, gourmet cheeses, crackers, jams, and all the other amazing things on the board make my heart happy. This jam would be perfect on a board or used with crostini and goat cheese. The possibilities are endless.

Onion Fig Jam

Onion fig jam is a fun, flavorful condiment that goes well with so many things. This recipe is Paleo and gluten-free.

Ingredients
  • 1 large red onion, thinly sliced
  • 1/2 C dry red wine
  • 1/2 tsp sea salt
  • 2 T light-colored honey (dark honey, like a wildflower, will overpower the other flavors)
  • 3/4 C dried figs, small-medium dice
  • 2 T red wine vinegar
  • 1 T fresh thyme
  • 2 tsp avocado oil

Instructions
  1. In a large saucepan on medium heat, add the avocado oil. Once the pan is hot, add the onions and sea salt. Cook for about 3-5 minutes, stirring occasionally to keep the onions from burning.
  2. Add the diced figs, thyme, and red wine. Reduce the heat to low and cook until the red wine is almost completely absorbed.
  3. Add the honey and vinegar and mix thoroughly. Continue cooking for about 10-15 minutes. A jam-like consistency should remain when it is done.
  4. Store in an airtight container in the refrigerator.
