Paleo Pasta Salad

Summertime is here and that means backyard get-togethers and BBQs. This Paleo pasta salad uses Jovial cassava noodles, chopped vegetables, and bottled vinaigrette to make this a delicious side dish you can put together in under 30 minutes. I recommend adding the vinaigrette right before serving because the cassava noodles tend to soak up the liquid and leave the salad dry. This is a pasta salad everyone will enjoy, even if they aren’t gluten-free or paleo.

Paleo Pasta Salad

This paleo pasta salad is made with Jovial cassava pasta, veggies, and Italian vinaigrette. It's perfect for summer and BBQs.

Ingredients
  • 2-8oz boxes of Jovial cassava fusilli
  • 4oz pepperoni
  • 1 C sliced black olives
  • 1 C diced cucumbers
  • 1 C diced bell pepper
  • 1 green onion, thinly sliced
  • 1 C shredded carrots
  • 1/4 C + 2 T small diced red onion
  • 2 C broccoli, cut into very small florets
  • 2 C cauliflower, cut into very small florets
  • 1-10oz bottle Tessemae’s Italian Vinaigrette

Instructions
  1. Prepare the pasta following the directions on the box. When the pasta is fully cooked, drain the noodles and rinse in cold water. Set aside
  2. In a large bowl add the pepperoni, olives, cucumbers, bell peppers, green onion, red onion, broccoli, and cauliflower. Toss everything together to thoroughly combine.
  3. Add the cooked pasta in and mix well.
  4. Right before serving, add the Tessemae’s vinaigrette and mix well, ensuring all ingredients are coated in the dressing.
