This is a Cuban dish I fell in love with the first time I tried it. If you love plantains, you will love this as well. If you use green plantains, they won’t be sweet and will be more like a potato. If you decide to use yellow, they will be sweeter and less starchy.
This Cuban-inspired dish combines plantains, spices, raisins, and green olives to make a dish that you will fall in love with. It's Whole30 and Paleo compatible.
• 2 yellow plantains, medium dice
• 3 T ghee
• 5 garlic cloves, minced
• 1 large yellow onion, small dice
• 2 lbs ground beef
• 1/3 C raisins
• 1/4 C red wine vinegar
• 1/3 C tomato sauce
• 3 T cumin
• 1 T cinnamon
• 3/4 tsp ground cloves
• 2 tsp sea salt
• 1/2 C green olives, sliced in half
1. In a large skillet on medium heat, add the ghee. Once it’s hot, add the diced plantains. Cook on each side until they are golden brown then remove them from the pan and set aside.
2. Add the onion and the garlic. Sauté until the mixture is translucent and fragrant, about 5 minutes. Add the ground beef, chop into small pieces, and continue cooking until the beef is no longer pink.
3. Add the tomato sauce, red wine vinegar, raisins, cumin, cinnamon, cloves, sea salt, and olives. Continue cooking until everything is combined. About 7 minutes.
4. Add the plantains into the beef mixture. Stir to combine everything and serve.
