When I first set out to make these mushrooms, the local grocery store I shop at had them priced at $8 each. I needed six and I just couldn’t justify spending that. I wasn’t quite ready to give up on this recipe idea so I tried a different store and they only charged $2 each, thankfully. These stuffed mushrooms turned out better than I had imagined in my head. These mushrooms are Whole30 and Paleo compatible and work great as a main dish or appetizer. They are easy and flavorful.
When the portabellas come out of the oven the first time there will be excess liquid. Soak that up with a paper towel to keep the mushrooms from getting soggy.
