Smokey Pork Chops

This is another recipe I can actually get my husband to eat. Like I said previously, he is super picky and a lot of the time he won’t even try the food I create. These pork chops have a creamy sauce made from coconut milk. When you are reducing the sauce, be careful not to simmer the sauce too long or it will break- the fat will separate from the solids.

Smokey Pork Chops

These pork chops will please even the pickiest eater. It's a one-pan dish that is Whole30 and Paleo compatible.

Ingredients
  • 4 boneless pork chops, about 2 lbs.
  • 1 tsp chipotle chile powder
  • 1 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 tsp sea salt
  • 2 T avocado oil
  • 1-13oz can full-fat coconut milk
  • 1 tsp liquid smoke
  • 1 lime, juiced
  • 1/4 C cilantro, roughly chopped

Instructions
  1. In a small bowl combine the chipotle powder, cumin, paprika, garlic powder, onion powder, and sea salt. Coat both sides of the pork chops with the spice mix. If you have extra, save it and you will add it to the sauce.
  2. In a large skillet on medium-high heat, add the avocado oil. Once the pan is hot, place the pork chops in the pan to sear. Sear both sides and remove the pork chops from the pan. Drain any excess fat from the pan.
  3. Place the pan back on the stove and reduce the heat to medium-low. Add the pork chops back to the pan along with the coconut milk, liquid smoke, lime juice, and any extra of the spice mix you may have remaining.
  4. Simmer the ingredients for 5-7 minutes, just until the sauce starts to thicken up. If you simmer for too long the sauce will break. Add the cilantro to the pan and serve.
