Almond Joy Collagen Bites

This recipe comes together quickly and makes a great snack to have on hand. You don’t need any equipment, like a food processor, these come together just by mixing them in a bowl with a rubber spatula. They are lightly sweetened with honey and contain collagen peptides, which help your gut, skin, hair, and nails.

Almond Joy Collagen Bites

Collagen bites make great snacks because they contain protein and healthy fats. These are also Paleo and gluten-free.

Ingredients
  • 1 C unsweetened coconut flakes
  • 1/2 C almond butter- no salt, almonds are the only ingredient
  • 2 scoops unflavored collagen peptides
  • 1 T vanilla extract
  • 1/4 C honey
  • 1/2 C sliced almonds
  • 1/4 tsp sea salt
  • 1/4 C chocolate chips (I used Enjoy Life mini chips)

Instructions
  1. In a medium mixing bowl, add all the ingredients for the collagen bites. Use a rubber spatula to mix everything until it’s thoroughly combined.
  2. Use a spring-loaded cookie scoop to form balls of the mixture. Roll them in your hands to make them smooth.
  3. Enjoy right away and store any extra in the refrigerator.
